Padhir Peni (The wedding dessert of South India)

 

Padhir peni is a dessert which was served in south Indian weddings 2 decades ago. Though it traces its origin from Karnataka it is also adopted widely in other states in souther part of India too. Even now this dessert is served in weddings which takes place in rural areas of Karnataka. Rava is the main ingredient. Rava has many health benefits


1.      It does not contain saturated fat or trans fat

2.      It helos deal with gluten intolerance.

3.      It has high protein content and is low in fat

4.      It also has a low glycemic index that makes it great for diabetic patients as well as for people who are on weight loss.

       Now let’s take a look at the recipe of Padhir peni:

1.      1.In a bowl, combine rava, water, salt , few drops of ghee and knead into smooth dough.

2.      2. Grease palms with oil and knead well. Cover and keep aside.

3.      3. In another bowl, beat ghee well till light and foamy. Add rice flour and beat well till it resembles cream/padhir. Keep aside.

4.      4. Combine sugar and cardamom. Keep aside.

5.      5. Divide dough into 8 roundels and roll first into a thin chapatti.

6.      6. Smear with a portion of ghee –rice flour mixture.

7.      7. Top with another thin chappati and smear that with ghee mixture.

8.      8. Continue process till all chappatis are stacked one on top of the other.

9.      9. Roll into a log and cut into equal portions.

10.  10. Roll each into a poori and deep fry in hot oil/ ghee till brown and crisp.

11.  11.Top each with sugar mixture, dry fruits and serve with milk
